We*ght Tracker Wednesday!

Yes, my foot still hurts.  *smile* I have not let that stop me from doing my daily workouts.
Yes, I am doing therapy on my hamstring. It is not going well.
Yes, I have done great on my eating this week! Minus one DQ blizzard.
Yes, I am the same weight I was a week ago. Bummer.
Yes, that is discouraging, but the logical side of me knows I need to shake it off and keep at it!
Yes, I have a recipe for you again this week!
Yes, it is another healthy recipe that the boys and Daniel LOVED!

Ham and Potatoes au Gratin

2 full cups diced extra-lean ham (I used Turkey ham and no one knew it!!!)

4 cups diced raw potatoes
1 cup chopped onion
3/4 cup shredded reduced-fat Cheddar Cheese
1 (10 3/4 ounce) can Healthy Request Cream of Celery Soup
1/8 tsp. black pepper
1 tsp. dried parsley flakes
1 tsp. prepared yellow mustard
Spray a slow cooker with butter flavored cooking spray.  Combine ham, potatoes and onion. Sprinkle Cheddar cheese  evenly over top. In a small bowl, combine celery soup, black pepper, parsley flakes, and mustard. Add soup mixture to potato mixture. Mix well to combine. Cover and cook on LOW for 8 hours. Mix well before serving.     ( I cooked mine for four hours then on warm a couple hours, I am finding my crock pot runs hotter than recipes seems to think! Do recipes think?)

Serves 6 (1 cup)   181 calories, 5 gam Fat, 3 gm Fiber

Next time I will double this recipe as there was only one serving left.  I like to have leftovers, especially when the boys like it so much! And Jedd is picky lately!

Yes, it is snowing right now.

Yes, I am heading to the gym and then starting my crock pot on a new recipe when I get home!

Please comment here or on facebook today so I know y'all are alive?  Anyone still reading this ol' blog?

I am!!!!!!!!!!!!!!!!!!!!!!! I want to try that recipe and be sneaky like you. I have a picky eater too. AND, I have that same question on the crock pot, mine seems to cook faster than any recipe suggests and I use warm a lot so it doesn't overcook. :)
Keep at it, I'm right here with you even though I don't comment all the time. :) Oh, and I think I am alive. Love it when you use y'all all the time.....hahahaha

Always reading...just bad at commenting!
Am GOING to try that recipe SOON! It sounds amazing. My children however, don't eat potatoes. Guess I'll have leftovers without even trying. :)

Love reading your posts on Weight Tracker Wednesdays. They inspire me. I was down a pound this week - which I'm pretty sure I ate right back after I weighed. I give myself a little wiggle room on Tuesdays - after I weigh, it's my cheat day, and then the rest of the week I focus on the next Tuesday.
Pretty sure the 2 workouts yesterday helped that number too. :)

We all stay the same some weeks. Don't let it get you down. It'll come off soon (but you already know that, don't you? lol)

I lost 1.6 this week for a total of 10.2 I think. I'm pleased.

We're gonna make it girl! :)

Hey if you aren't gaining in my opinion that is doing good.

I lost 3.8 this week. It should have been more, but I'll take what I get.

I'm here, I'm here. I feel like that on my blog a lot. I think some people read but very few ever comment. So I feel like I am talking to myself. :) Anyway, I didn't weigh yet today but I have been working out (5 days a week) and eating well (minus one "calorie free" day a week). We can do this!
